At first glance, cauliflower is not an extremely attractive food. It belongs to the vegetables that you got from childhood prepared by mom or grandma. Completely overcooked, the cabbage fell apart just watching it. Little salted, with dry potatoes, it lay there on the plate.
But probably even those of you who associate less hair-raising experiences with cauliflower don’t prepare meals with it very regularly. At the very least, it’s not exactly one of the hip superfoods touted on the web and in restaurants around town.
Completely wrong! Because cauliflower is healthy and rich in vitamins and, when prepared correctly, extremely low in calories and incredibly tasty – in other words, the perfect diet companion. But what makes this vegetable so healthy?

Cauliflower has a lot of vitamin C, minerals as well as fiber. It also has a high content of phosphorus, calcium, potassium and iron. The vegetable cauliflower is, most people do not even realize, very low in calories. 100 grams of cauliflower contain just about 25 kcal and very little fat.
The vegetable is therefore not only a very healthy vegetable, but above all one that is perfect as a diet companion. If you are lucky, you can even get a specimen in purple, orange or green – purely natural variants of the white cauliflower that is more common in our country.
However, a few things should be kept in mind regarding storage and consumption:
Storage and consumption
Already at the time of purchase, you should make sure that the leaves of the cabbage are green and the stalk appears nice and juicy. The flowers should not have any stains. Otherwise, the cabbage will not be fresh. Cauliflower should ideally be stored in the refrigerator. There it keeps fresh for one to two days. In the freezer, cauliflower can easily be stored for several weeks. To do this, blanch the florets, rinse in ice water and place in a freezer bag.
Cauliflower can be eaten in many different ways. It can be enjoyed raw or cooked. However, the cooking time should be kept as short as possible. If you add some milk or lemon juice, the white color of the cabbage will keep even better. Classically, cabbage is served with melted butter.
